...making chicken satay

This is one of my favourite, easy-to-cook dinners. It comes from 'Jamie's 30 Minute Meals', and it is possibly the most simple and delicious way to cook satay. Try it!



 Chicken Satay

You will need:
For the paste-
A small bunch of fresh coriander (we like to use a lot)
A couple of chillies (we like things on the spicy side, so you may want to use a bit less if you don't like your food too hot)
A clove of garlic
Some peanut butter-about 3 tablespoons
Glug of soy sauce
A small bit of ginger
A glug of olive oil.

Chicken (we use chicken thighs. We've also used turkey breasts-they work well too)

Method
Put all the ingredients for the paste into a blender and whiz.  Keep tasting to see if it needs more of one of the ingredients. We always seem to add more chilli or peanut butter.

Not the most attractive looking paste-but believe me it is yum.

Then chop your chicken up into smaller pieces. Begin to heat a little of the paste in a frying pan, and then add the chicken. Cook the chicken and then add the rest of the paste.


Serve with whatever you like! We are fans of noodles, but have also been loving it in an iceburg lettuce leaf-kind of like a wrap. It adds a nice cool, crunchy texture.
